So, the husband and I decided (or, more accurately, I decided and he conceded) to do the Whole 30 Challenge. We haven't eaten so well the past few months, and, quite honestly, I'm tired of feeling awful. I won't go into the details of Whole 30 here, but I would strongly recommend reading It Starts with Food by Dallas and Melissa Hartwig.
I thought I would share my eats from Day 1. I don't know that I'll post daily about this, but I am keeping track of my food and thoughts in a notebook for accountability and to see how I'm feeling about the whole process.
So, onto the food...
Breakfast: 7:55am
Sausage-spiced ground beef (lean ground beef with garlic powder, fennel seeds, red pepper flakes, salt, and pepper since I don't actually like sausage) scrambled with two eggs
1/2 avocado and 6 whole strawberries
With black coffee because... coffee.
This breakfast was pretty good. I'm not always the biggest fan of eggs, but this was fine. It kept me full until lunch, which is the goal :)
Lunch: 1:00pm
I used some of the ground beef (without fennel and red pepper) to make an Indian curry inspired by the recipe in It Starts with Food. This curry has broccoli, carrots, haricot vert, coconut milk, and curry powder topped with chopped cashews.

Lunch was yummy. I need to tweak the recipe a bit as it was a little too salty and curry-y, but not bad. I stayed full until 6pm.
Snack: 6:00pm
1 banana and a handful of raw almonds
I probably shouldn't have snacked this late, especially since Whole 30 doesn't really allow for snacking (except for highly active people, nursing mothers, etc.), but I was hungry and dinner wasn't even in the oven yet.
Dinner: 7:30pm
Breaded chicken bites (breaded with coconut flour, ground flax, cumin, chipotle chili powder, garlic powder, salt, and pepper. Baked at 425)

This dinner was delicious--Stephen (my husband, and the pickiest eater I've ever known) even liked it! Definitely will repeat.
All in all, I had a great day. I did want to snack more than I did because I was home all day, but I'm proud that I didn't. I'm also surprised that I didn't crave sweets (aside from eating fruit), especially after dinner. I do hear, though, that the sugar cravings rear their ugly heads around Day 3, so I'm not delusional enough to think that they won't appear!
